Rossini’s Sheraton Grande Sukhumvit

Although it is a hotel restaurant, Rossini’s has a distinct personality and a cadre of regular customers who enjoy its renowned Italian cuisine. Located on the Sheraton’s second floor, it is decorated to resemble a Tuscan farmhouse with a large fireplace along one wall, a heavy beam ceiling and a beautiful tile floor. The effect is rustic, but the restaurant’s white table cloths and beautiful place settings give it elegance and class. This is definitely a restaurant designed for fine Italian dining and not a ‘pizza joint’ for those wearing flip-flops and singlets.

An important part of insuring both the quality and authenticity of the food in a restaurant is having highly qualified chefs in charge of the kitchen. Rossini’s has taken care to accomplish this in two ways.

Chef Alfredo Russo, the celebrated chef and proprietor of Dolce Stil Novo, in Turin, Italy serves as an advisor for Rossini’s. Chef Russo, whose restaurant was awarded a Michelin star after only three years of existence, comes to Rossini’s several times a year. He is introducing some of his signature dishes and other items to the menu and is in the process of establishing a cellar of exceptional wines. During Chef Russo’s visits he hosts special wine dinners for the benefit of Italian food lovers in Bangkok and conducts cooking classes for those who want to learn a little about cooking Italian food.

Rossini’s resident chef is Stefano Merlo, a native of Veneto in the northeast of Italy who is gifted and passionate about cooking. His previous experience has included stints at the three-star Michelin restaurant, Le Calandre just outside Padua and at the highly acclaimed Enoteca Pinchiorri, an Italian restaurant in the Ginza district of Tokyo.

Rossini’s is open for business lunches on weekdays and for dinner every evening of the week. At lunchtime the menu features set lunches of regional Italian specialties at 650 baht. There is a choice of delicious antipasti from the antipasti counter, three pastas, four main course and dessert options and coffee and tea.

The pasta dishes are especially appealing and often include items like Rigatoni amatriciana with tomato, pancetta and red onion or Fusilli with blue crab and a sweet garlic sauce. The main courses vary, but we recently enjoyed Braised beef cheeks with polenta Taranga and Steamed black cod with fresh corn and pancetta. The desserts of items like Hazelnut tart with red wine sorbet or Hot chocolate foam in rum crushed ice are equally inspiring.

At dinner time things really get serious and some of Chef Russo’s signature dishes take Italian dining to new levels. There are three-course set menus at 900 baht, four-course menus at 1150 baht or 1450 baht, and a five-course feast at 1750 baht. They all include complimentary coffee, tea and biscotti. There is no skimping on quality on these menus and they include items like Capon and parmesan ravioli with lemon sauce (Chef Russo signature dish), Rack of lamb with almond and eggplant crust and Home-made pappardelle tossed with lamb ragout.

The a la carte menu is packed with delicious selections. One of our favorite antipasti dishes is the superb Veal tongue in green sauce. This 490 baht specialty of Chef Russo features deliciously tender slow cooked tongue and a piquant green sauce that serves as a perfect foil to the veal. When coupled with the 330 baht Bean soup with maltagliati pasta, and a main course like the 1300 baht Grilled wagyu ribeye with rosemary sauce, the result is an epic Italian meal of superb quality.

The wine menu at Rossini’s is comprehensive with a large selection from around the world, and Italy in particular. The service as it is in all of the Sheraton’s outlets is informed, competent and friendly without being overbearing.

Rossini’s has now been in existence for over ten years. It has always been excellent, but with the team of Chef Alfred Russo as an advisor and Resident Chef Stefano Merlo in the kitchen, things have just gotten better.
